Ready Steady Cook Challenge

Ok so I didn’t do it in 20 minutes, I never cook fast but after my Cheese post husband set me a challenge he placed Chilli, Potato, Lime, Cheese and Breadcrumbs on the worktop and I jumped at an idea I have been meaning to do for a while.

Cheese and Chilli Balls

Boil the potatoes and then mash.
Fry off some tiny pieces of bacon
Whilst waiting to this I grated some cheese and chilli, then added a little fresh lime juice with salt and pepper.
Cut some cubes of cheese.
Placed breadcrumbs in a bowl and added some grated Parmesan.
Beat an egg in another bowl.
Once mash is ready add the cheese etc, bacon and a small amount of cornflour.
Roll into a ball then push a cube of cheese into the centre, and re-roll to a ball.
Heat a little oil in a frying pan.
Dip the balls into the beaten egg, then in the breadcrumbs.
Fry until a nice crispy.

They were nice a fluffy inside, the only thing we found was a standard cheese didn’t have quite enough bite to add to the intense flavour we both felt they needed.

Hubby – would be amazing with a stronger cheese
