Peaches #LoveFoodHateWaste and #OneIngredientAugust

Well, this month I am joining two Linky’s together #LoveFoodHateWaste because the #oneingredientchallenge was Peaches  Set by Nazima at Working London Mummy and Laura at How to Cook good food  

We happened to stop at a farm shop on the way home from Holiday and Bought lots of beautiful fresh fruit, Apricots being one of them, some were eaten and what was left a couple of days later I used to make a cake.

I had some of my caramel cake batter left and as I dont like waste I put it into a loaf tin, spotted the apricots and sliced them, placed on top and cooked (obviously they sank to the bottom of the mix) but all good.

My Husband was a little wary but he agreed it tasted good the sharp contrast against the sweet cake was nice, added a little bit of double thick cream and enjoy.

I also made a Duck and apricot pie with Filo pastry, it was delicious

I sautéed chopped apricot and onion for a few minutes, added a selection of herbs and a little vegetable stock.

A little of cumin, coriander and fennel were used

After following the directions for the duck, I then chopped it finely adding to the pan to mix all together and placed in the filo pastry, allowing the mix to reduce.

adding a lid and cooking until pastry nice and golden brown.

I served with homemade wedges and a selection of veg (green beans, not shown here as little man wont eat them and corn on the cob)
